Streusel Coffee Cake and Whipped Cream


Graham Streusel Coffee Cake

Ingredients
  •  1 1/2 cups graham cracker crumbs
  • 3/4 cup packed brown sugar
  • 1 1/2 tsp. ground cinnamon
  • 2/3 cup butter, melted
  • 1 package yellow cake mix

Directions

Mix the first five ingredients together; set aside. Mix the cake mix according to package directions. Pour helf the batter in a greased 9" X 13" X 2" baking pan. Sprinkle with half the graham cracker mixture. Using a fork swirl the graham cracker mixture in the cake batter just enough to create a ribbon through the cake. Be sure to not swirl too much. Spoon the remaining cake batter on top. Sprinkle the other half of the graham mixture on top of the cake without swirling it in.

Bake at 350 deg. F for 35 - 45 minutes or until toothpick inserted in the center comes out clean.

Cool. Top with whipped cream (optional) (recipe below).

Homemade whipped cream

Ingredients
  • 1 cup heavy cream
  • 1 tsp. vanilla
  • 1 tbsp. confectioners' sugar
Directions

In a large bowl, whip cream until soft peeks are just about to form. Add vanilla and sugar and beat until peeks form. Do not over beat. It will become lumpy and buttery like.

Stores for only a few days in refrigerator.

Pumpkin Pie


Pumpkin Pie

Ingredients
  • ·         ¾ cup sugar
  • ·         ½ tsp. salt
  • ·         1 tsp. ground cinnamon
  • ·         ½ tsp. ground ginger
  • ·         ¼ tsp. ground cloves
  • ·         2 large eggs
  • ·         1 can (15 oz.) 100% pure pumpkin
  • ·         1 can (12 oz.) evaporated milk
  • ·         1 unbaked 9 inch deep dish pie crust
Mix all ingredients together until well blended.
Pour into pie crust
Bake at 425 deg. F for 15 minutes. Reduce heat to 350 deg. F and bake from 40-50 minutes or until knife inserted in center comes out clean.
Cool completely and enjoy!
*I add a dash of nutmeg to the pie when mixing it. I also sprinkle a small amount of cinnamon and nutmeg on top of the pie before I bake it. 
I enjoy baking for people I love and this is a simple pie that doesn't take very long but it's still special because it is homemade.
